Mediterranean Dinner

Tonight, I pulled out the box of falafel mix ($3) I’d picked up from Well.ca.

It just happened that I had all the right leftovers – a few inches of a cucumber, one ripened tomato and handful of Greek olives that the vice principal had given to us. I fried up the falafels, drizzled a bit of tahini and served it with some leftover quinoa.

I love it when things work out perfectly!
